For this special day, our kitchen is serving a vibrant Seared Ahi Tuna dish featuring radish, watercress, fennel, watermelon, pickled watermelon rind, spring onion, and a green garlic emulsion—an elegant nod to the freshness of summer. To pair with it, we’re releasing a limited-run beer just for the occasion: TimeBomb!, our classic Saison aged on kumquats. The fruit adds a burst of tart-sweet brightness that perfectly complements the subtle fruit and noble hop character of this rustic farmhouse ale.
